  1. Review the course schedule on this page.
  2. Find the course you want to take, and write down the CRN or course number.
  3. Sign on to my.ngskmc-eis.net ►
  4. Click on "Student Center".
  5. Under "Academics", click on "Enroll".
  6. Select "May 2024" and click on "Continue".
  7. Input the course number, and press the Enter/Return key.
  8. Continue to enroll and pay for class.

If you browse/search for your class:

  1. Input Subject Code (for example, SOC).
  2. For "Course Career", select "Undergrad and Ext. Ed. Credit".
  3. May Intersession courses are intermixed with regular Spring Session courses;
    May Intersession courses start in May and have a 3 digit section number.
  4. Find your course, and continue the process to enroll and pay for the class. PAYMENT IS DUE AT THE TIME OF REGISTRATION.

ANTHROPOLOGY

ANT 495-001 Food Traditions of Bulgaria (Study Abroad) (3)

This course focuses on the multiple relationships between food and humans with a special focus on the food traditions of Sicily.  We will focus on the questions of “Why do we eat?” and “Why do we eat what we eat?” To answer these questions requires understanding biological components that contribute to health, nutrition, and growth as well as historical and cultural influences, and issues  related to food production and distribution. The course includes a 13- day trip to Sicily where will conduct field studies that bring the issues discussed in class to life. Our travel arrangements in Sicily are organized by Stone and Compass. This course also will be coordinated with other DH courses in Sicily.

The primary focus of the course is on cultural dimensions related to food: the processes by which distinct senses of taste and cuisines have developed and changed over time; the ways in which customs surrounding food acquisition and consumption have developed; and the impact of contemporary issues on food practices of the 21st century. These issues are explored in more detail during the Sicily trip where we learn how the historical and contemporary cuisines and food customs reflect the region’s cultural history and how food practices are changing due to current issues such as globalization, sustainability, and notions of food sovereignty.

Topics covered include an overview of the financial planning process, goal-setting, cash flow management, financial statements and ratios, income taxes, banking, credit and debt, insurance, the time value of money, stocks and mutual funds, investing, starting a business, renting and home buying, and retirement planning which are intertwined with social issues whereby organizations use their informational advantage to prey on non- majority and lower-income individuals.
